Potato - Beloved as a thickening agent for stews, soups, and gravies. Ground dried pototoes. Bob's Red Mill declares that potato flour imparts a "moist crumb." Used sparingly in flour mixes. It tastes like potatoes (like one would expect) and stores well. Great for baking. Helps make dough elastic. Has more subtle flavor than Potato Flour.

Quinoa - Ground from seeds of a plant that is associated to beets and spinach. The resulting flour is a good source of protien. The flavor is not strong. Works the best in flour mixes.

Brown Rice - often used in breads, and a great flour mix ingredient. It is nutty and imparts a "whole grain" feel to breads. Has more flavor than white rice flour and needs to be refrigerated.

White Rice - One of the few flours on this list that is used alone in baking. It is ground white rice. Is still best when mixed with other flours. Baked goods are spongy and the flour imparts a light texture. Not very nutritious and much less flavorful. stores nicely.

Commercial bakers add inulin to products to replace some of the fat and sugar and to modify the texture and taste. Investigate reported in Food Science and Technology International found that adding inulin to gluten free bread improved the sensory qualities of the bread, something that is sometimes lacking in gluten free products. Inulin also improves the texture of reduced-fat ice cream and plain unsweetened yoghurt and it reduces the formation of ice crystals in icy dairy products.

Inulin powder is sometimes sold as a stand-alone fiber supplement, to be mixed with water or added to food. Some people are very sensitive to its laxative effect; this tendency may be reduced by gently adding inulin products to your diet rather than lively a large whole at once.

Some gluten free home bakers add inulin to products to heighten the fiber content of their diet. Try adding one teaspoon of inulin to muffins, cookies, cake and pie recipes. You may be able to decrease the sugar by an equivalent whole without noticing a difference. Try adding a tablespoon or more of inulin to yeast bread or roll recipes. You may be able to build up to about two teaspoons of inulin per serving, which will substantially increase the fiber content of your bread or rolls. Inulin may alter the texture of your baked products, so experiment with the whole of inulin that works with any single recipe.
